I haven't seen the Jimmy episode in awhile but wasn't he fully conscious and not totally dead when Castiel re-inhabited him? If that's the case then like Meg he's just gonna be in stasis until Castiel leaves him at which point his body will die from the damage it's sustained.
This is most likely hopefully true but it seems he's alive enough to crave red meat so ... Uhm, I don't really know where I was going with that but yeah.
