The Wayside School series is fantastic. It's been a while since I've read the books but I can remember the ice cream that tasted like people, the kid who turned into a rat after he took off all his coats, and the teacher who could read people's minds because she had an extra ear on top of her head.

The cartoon is a bit different then. But there is a dead rat named Sammy. I'm not sure if he was ever a student though.
